We've got a huge level of salmonella in our envirnments thanks largely to the confinement production of animal foods. That's one consideration. We are all exposed to it and other bugs all the time. We wash our entire bodies a lot - how often do your pets have the chance to wash off environmental contamination? They aren't meant to do that - daily baths wouldn't be healthy for most dogs, for instance.
So your pets experience much higher levels of contaminants than we do, all the time, and handle it well. We can't protect them from that. I do what I can to ensure that the meat I feed is clean, as naturally raised as possible, and locally grown where possible. Beyond that, I feel more scared feeding commercial foods that I haven't seen prepared, than raw meat that I can handle myself. I do still feed both, however. You can't put your dog in a bubble. Heck, my heart dog Ben could get smashed by the ram any day and seriously injured - I can't stop him from doing what he loves just because there's some risk.
With that said, I might point out that I would NEVER start a dog of any size on a piece of raw meat and bon (chicken in particular) as huge as a drumstick. That's like feeding a baby a steak and broccoli with bearnaise sauce as their first solid meal - what do you THINK would happen? Raw shouldn't be rushed into - you'd switch your dog gradually if you were changing even dog food formulas - why would it be different going to a whole new paradigm? MOST really can handle it if changed over gradually instead of just throwing down a quarter pound or so of raw meat and bone.
