I am currently feeding a homemade raw diet, and I do like to keep variety. Certain meats are leaner than others and different veggies contain different nutrients. Feeding a variety will help to ensure your dog doesn't become deficient in anything. I find it is much easier on me to do it this way because if I'm out of rice, I can use rolled oats or amaranth. Or if I'm out of carrots I can use canned pumpkin, sweet potato ect.. If the dog is used to different things, you can improvise a little and not have to worry about a picky dog turning his nose up. Plus certain supplements and vitamins aren't for every day. I also like to think my dog enjoys the variety of meat and different tastes, but maybe she could care less. I think variety is just as important for those who feed kibble. If the store is out of what you normally buy, or if what you feed gets recalled, at least you have alternatives.
