Spaghetti Sauce

     I forgot I also add summer squash in there. I do it to add more veggies to my SO diet Big Smile It's sneaky lol. The only veggies you can really taste are the green pepper and onion. You can also add spinach this way, celery and most other veggies really. I learned this trick from a former person I worked for. She gave me some tips to help my SO eat healthier without knowing it! My SO who is on the picky side and has very sensitive tastes buds doesn't realize there's carrot and squash in there. He only really picks out the onion and green pepper flavors which he loves.

    Humpff!  Now they tell me what the carrot is for.....after I've already got 14 quarts simmering on the stove.  Dang, it sure smells good.

    MIL had a male friend from Italy and he insisted that you don't mix garlic and onion in true Italian dishes.....

    Sadly, I am the only one who likes alfredo in my house, so when I'm craving it, we go out.

    He must've lied about being from Italy, lol! My Grandma and Great-Aunt (Gram's sister), along with several other family members on my mothers side, are from Sicily and they add onion and -lots of- garlic to everything!

    My sauce kicked some serious butt.  And, Gingers garlic spread recipe RULES!!  They ate an entire large loaf of Italian bread made into garlic bread!   Yikes!

    Well, yeah, I made 14 quarts of the stuff!  Just getting ready to bag it up for the freezer.  And, DH HAS to have lasagna for his b'day, and when I make his, I always make several to freeze.

    Why I thot I'd freeze the sauce is beyond me.  Shoot, will have to make lasagna for the 13th, so just went ahead and put together SEVEN danged lasagna's today.  I didn't do the first thing around the house today, but, I'm at a place that I could afford to slack off and do something different instead.  But, now I have a bombed out looking kitchen to clean up.

    Sigh!

    What she said lol. I'm part Sicilian, and if my Great Grandmother were around and you called her Italian, you'd get an hour long lecture lol (while she kept insisting you finish your food or go for more). 

    There are definitely regional differences to cooking, and I'd be interested to know what region doesn't ever add onion and garlic together! My family always has. I honestly, don't know much about other regions cooking, only what I've experienced from my Sicilian side, so I'd love to learn!
