There's some science behind large breed foods. The particular reasoning means using, as you've noticed, higher glucosamine sources like poultry, and more high quality protein. Lamb has been difficult to source lately (read: too expensive to make it a main protein source without supplementation).
Use caution if lamb is the only ingredient in a dog food. Check for vegetable protein sources, also - glutens, proteins, or multiplication/fragmentation of whole grains, which can allow a protein booster to be slipped in.
Vegetable protein sources are much more high protein than meat, so you can see "lamb" as the first ingredient (water inclusive), then some grain and a fat source, and then a gluten or protein, and in reality most of the protein comes from the vegetable protein. This isn't helpful to
any sized dog!
