Maybe corn beef was too expensive? Perhaps that's why Dad used ham? He grew up on a farm in pretty lean times (he'd be 88 next month had he lived) AND raised four daughters on a firefighters salary, so it could simply be a cost issue.
And, you are right about the saltiness of ham then. My folks almost always used picnic hams. Wayyyyy salty. Mom always used that in her bean soup and the soup always tasted too salty to me.
Have they changed a lot? I haven't bought a "real" ham in years. Always turkey or processed ham without the bone.
Beets are one of those things that I have to be in the mood for. And, I prefer them cold to warm.
