    Soup Recipe's (Yummy Potato Soup, Shadowsgin)

    We kinda got started on Soup Recipes in the "Crock Pot" topic.  Thought maybe if I put my recipe here you would all share your secret special soups with me too! 

     

     

    Yummy Potato Soup Recipe (Makes a large pot)

    1 lb bacon fried crispy* set bacon aside til soup is ready to serve.

    Use a small amount of the bacon grease to saute 1-diced onion and 2 cloves chopped garlic**

    Peeled and cubed russett potatoes (I usually do a whole 5 lb bag, sometimes more, lol, cause my hubby loves it and the girls at work love it.)

    Put peeled and cubed russett potatoes in pot with just enough water to cover add a little salt and tablespoon butter.

    Add the saute'd onion and garlic.

    Cook in slow cooker or pot on stove on low temp til potatoes are fork tender.

    Add milk and cubed velveta cheese to desired taste and consistency ( I like my soup thick and hubby likes lots of "juice* lol)

    Pepper to taste

     Remember when adding the milk and cheese to keep temp low, stir occasionally but the more you stir the more your potato will break down some like it better that way.

    When cheese is melted pour into soup bowl, crumble a generous amount of bacon on top.  Serve with hot bread or crackers.

    *If you prefer a fast fix you can use bacos or dried bacon bits.

    **If you are not a bacon eater, you can saute' your onion in butter or EVOO.  We love onions and garlic so I use 2 onions and 4 cloves garlic.

    I also like to garnish with fresh chopped chives and a dolop of sour cream.

    I have a couple of surefires that my family loves. One is amazingly simple and is eaten quickly even by the babies.  And it is a Semi Home made type so even easier!  Remember I have a HUGE family so you can halve this and still have a lot of food! These are from our Family Cookbooks and the ones written up as fund raisers for Rescue

     

    Bwana's Spicey Chicken Vegetable soup

    In a  Large crock pot

    Two and 1/2 boxes of Chicken Broth ( about 10 cups )

    The shredded meat from 2  supermarket rotisserie Chickens. ( I like the plain chickens for this)

    1 large can of Rotel Tomatoes with chiles ( dice the tomatoes before adding)

    2 large cans of mixed vegatables diced. ( potatoes, celery, carrots like a veg all type)

    1 can of corn

    Allow the first ingredients to simmer for all day on low,  from the produce section...(. both microwaved for 3 minutes after cutting. )

    2 zuchinni cut into course chunks

    1 sweet onion cut into large chunks

    Simmer for an additional 1/2 hour

    Serve with soft rolls .

    This is also a great way to use left over turkey !! and It freezes extreamly well!

    Bwana's French Onion Soup

    To make a single serving increase as wanted for additional . I use the little stoneware soup crocks that you can buy at old time pottery..

    Take a  1/2 a large Sweet onion ( Vildalia or Maui are best)

    Slice into thin wedges and cut the root core  and top off.

    Place into soup crock

    with one tablespoon of real butter

    Microwave for 1 minute

    add 1 cup of water,

    two beef boullion cubes

    back in microwave for 2-3 minutes

    when done remove and top with 1/2 of a toasted ciabatta roll ( I like poppy seed or onion best)

    Top the roll with a handful of motzarella cheese and place under broiler till melted.

    carefully remove and serve. VERY hot!

    This is a great winter soup and with a salad is a full dinner.

    Bwana's Saurkraut Soup

    ( I know WhuuuT ??!!   But this is  a HUGE hit and once tried is always requested !!)

    in a large crock pot

    put 1  thinly sliced and sauteed polish sausage. ( about a pound)

    Add Three cans of Cream of Potato Soup, two cans of Cream of Celery Soup

    Add 6 cans of  lowfat milk stir till blended

    Add one pound of fresh deli saurkraut in a bag or two cans of saurkraut.

    Allow to simmer for several hours on low.

    Serve with soft rolls a very hearty soup this is satisfying on even a cold long day !!

    The saurkraut adds just a bite of seasoning and the cabbage fills the tummy in a pleasant way.

     I love soup but the family wants something that can fill them up so these are the most frequently cooked

    Fall and Winter Soups.

     Warm By The Fire For RV trips and Dog Shows these are hard to beat.

     Shadowsgin, that recipe could NOT have come at a better time.  (See my "soft food ideas" thread.)  My DH is not a soup lover, I've seen him eat it twice in the years we've been together, but even he might eat cheesy potato soup with bacon on top.  I'll try my hardest, anyway, and if he doesn't....more for me!

    Nope the dairy in the cream soups really tone down the " bouquet" from the '***.  It is modified dramatically to a simple tangy fragrance as oppposed to a heavy handed krauty stink.   We discovered the foundation for this recepie in an Amish township and WOW walking in both of us were instantly hungry, then they offered us some "*** Soup"  uhhh No thanks... then the waitress said if we hated it they would give us our dinner for free... well heck I was soooo ready to hate it. But we ended up eating it everyday for two weeks until I was sure I had it figured out and the cook ( not chef) agreed to chat with me. I asked her to tell me if I was close, by her mouth hanging open I knew I had hit it.   Then When I suggested sprinkling bacin bits on the top she let me see her recipie file!   This is a Soup great with beer or a light wine and as I said , RVers need easy and fast for the shows in the cold. This one is such a winner you would be shocked!

    Yummmmmmy!  Thanks for the great recipe's.   I cant wait til I have all that leftover Turkey!!!   That was a great idea!   Hubby and I eat more chicken than anything so I am always looking for new ways to do poultry.   I am looking forward to trying your french onion soup too.   I have never been too big on Saurkraut although I love cooked cabbage so I may have to try the saurkraut one tooStick out tongue

    I got a recipe from a friend that I tried this weekend.   My Hubby just flipped over it!  

    TORTILLA SOUP  

    3-4 Cups of cooked chicken (4 cans) (I use canned chicken it is much easier)

    ¼ cup of margarine

    ½ chopped yellow onion (I used a whole  onion)

    ½ chopped red onion(I used a whole onion

    ¾ cup chopped green onion tops (I used one whole bunch)

    ½ chopped green pepper ( I used a whole Bell and several banana peppers cause there was a bunch left in the garden that needed to be used)

    1 **  4-oz can of green chilies(I used the chopped ones)

    1 ½  T. cilantro ( I chopped a quarter of the little bunch they come in)

    ½  t. chili powder

    ½  t. white pepper – does not have to be white

    3 cups of chicken stock

    2** 26 oz cans cream of chicken soup

    2 cups of sharp cheddar cheese shredded

    1 quart of  half and half

      

    Large stock pan: All of this barely fits in an 8 quart cooking pot.

     

     Sauté’ onions, peppers and green chilies until tender. When these are translucent I put them in the pot and then simply add the remaining ingredients and then simmer about 30-45 minutes.

    Serve with soft flour tortillas, can pinch off bite size pieces put in your soup and it resembles dumplin flavor.

    I also garnished w/ Mexican blend fancy shreaded cheese

    Check out the Tortilla Soup recipe I just posted,  My hubby and yours sound the same,lol!  My Hubby got all his teeth pulled over the summer and hates his dentures.   We have learned to cook differently ever since then.   Some soup  recipes require chewing anyway but I think he might like the Tortilla soup.  The Tortillas get very soft and melt in your mouth.  The canned chicken can be shreaded very fine and wont have to be chewed, given that you saute the veggies til soft I think he would love it!

    I've made this several times and I don't much care for soup...

    Spinach and Wild Rice Soup
    Ingredients
    3 cups water
    1 14--ounce can reduced-sodium chicken broth
    1 10-3/4-ounce can reduced-fat and reduced-sodium condensed cream of chicken soup
    2/3 cup uncooked wild rice, rinsed and drained
    1/2 teaspoon dried thyme, crushed
    1/4 teaspoon ground black pepper
    3 cups chopped cooked chicken or turkey (about 1 pound)
    2 cups shredded fresh spinach

    Directions
    1.    In a 3-1/2- or 4-quart slow cooker, combine the water, broth, cream of chicken soup, uncooked wild rice, thyme, and pepper.
    2.    Cover and cook on low-heat setting for 7 to 8 hours or on high-heat setting for 3-1/2 to 4 hours.
    3.    To serve, stir in chicken and spinach. Makes 6 (1-1/2-cup) servings.

    Thank you so much for this recipe!!!  It got cold and snowy here in N.W.Arkansas yesterday so I thought it was a perfect day to try your recipe plus get some of the left over turkey used!!!   I loved it and better than that Hubby loved it too!  It was so easy to make, everything was in the cabinet as most of the ingredients are staples in my cupboard.  I didnt do the slow cooker version, I used my stock pot on the stove.  It was sooooo yummy.  The girls in the office are going to have it for lunch today, I think it will be a big hit!

    this is really yummy. made the second half of the pumpkin into soup today actually..:

    pumpkin cream soup:

    INGREDIENTS (Nutrition)

    • 6 cups chicken stock
    • 1 1/2 teaspoons salt
    • 4 cups pumpkin puree
    • 1 teaspoon chopped fresh parsley
    • 1 cup chopped onion
    • 1/2 teaspoon chopped fresh thyme
    • 1 clove garlic, minced
    • 1/2 cup heavy whipping cream
    • 5 whole black peppercorns
    1. Heat stock, salt, pumpkin, onion, thyme, garlic, and peppercorns. Bring to a boil, reduce heat to low, and simmer for 30 minutes uncovered.
    2. Puree the soup in small batches (1 cup at a time) using a food processor or blender.
    3. Return to pan, and bring to a boil again. Reduce heat to low, and simmer for another 30 minutes, uncovered. Stir in heavy cream. Pour into soup bowls and garnish with fresh parsley.
