Given the current money crunch, I thought this might be a good topic to help others out a bit. What's your favorite?
Mine is Boston Baked Beans
2 lb dried navy or pea beans 2 tsp dry mustard
1 lb salt pork 4 tsp salt
8 T sugar 1/2 tsp pepper
2/3 c. molasses 1 med onion, sliced
Soak beans overnight. Parboil 10 min with 1 tsp baking soda. Run cold water through them.
Dice salt pork in 1 inch squares. Mix other ingredients with hot water (about 4 cups). Pour over beans.
Bake at 300 degrees for 6 hours. Check them often and add water as necessary to keep them from drying out.
This is an old recipe from the Durgin Park restaurant in Boston (my gram waitressed there in the early 1900's). It works best using a beanpot, but I have tried it in a crockpot as well, cutting down on the water. Beans and hot dogs were a staple at my house on Sat night. Hub always like to add tomatoes, chopped, to it.
