You have to figure protein on a dry matter basis. Dry kibble is usually 10% moisture, so if a food is, say, 27% protein and 10% moisture, it's about 30% protein, dry matter. The calculation for it is the nutrient amount divided by the reciprocal of moisture. So if you have a dry food that's 27% protein and 10% moisture, divide 27 by .90 to get 30% protein, dry matter. If you have a food that's 8% protein and 75% moisture, it would be 8 divided by .25 = 32.
So let's say you have a raw diet that's 13% protein and 70% moisture. Divide 13 by .30 to = 43% protein. Moisture levels vary, but you can find that info on [link
