    St Patty's Day is coming

    So do you cook something special?  We always have NE boiled dinner (corned beef, cabbage, carrots, turnip, onions and beets).  Actually, I'm looking for a green dessert of some sort, as son's new GF may be coming...if she dares!  I don't think I could handle green frosting....

    Creme de Menthe Cake
     
    1 (18.25 ounce) package white cake mix
    3 tablespoons creme de menthe liqueur
    1 (16 ounce) can chocolate syrup
    1 (8 ounce) container frozen whipped topping, thawed
    2 tablespoons creme de menthe liqueur
    Green food coloring if desired




    DIRECTIONS:
    Prepare 1 box white cake mix as directed, except substitute 3 tablespoons Creme de Menthe flavoring or liqueur, for 3 tablespoons water.
    Pour into 13x9 inch pan and bake according to package directions.
    Remove from oven and while HOT, poke holes in cake with fork. Then pour chocolate syrup over the top. Refrigerate (or freeze, if desired). After cooling, mix whipped topping with 2 tablespoons of creme de menthe and spread on cake. Keep refrigerated. Freezes great!!

    How about creme de menthe parfait?  Layer creme de menthe liqueur with Haagen Dazs (or some other premium vanilla ice cream), and add a Marachino cherry on top.  Fancy, luscious, and easy!

    Thanks for the ideas...dinner will be on Sunday, as DS has to work today.  Seeing as we are chocolate lovers, I decided to try a recipe for a cake that I found on the internet...made with Bailey's Irish Creme.  Better not be a flop, cause that stuff is expensive!!!
