    Gina- what happened to the "human" recipe section?  If I posted this in the wrong section then PLEASE feel free to move it![:)]


    I was asked by a couple folks for some salmon recipes so here are a couple of my favorites. If you have a good one, pass it on along!

    Also here is a good "rub” for salmon

      Magic Dust
    From Peace, Love, and Barbecue by Mike Mills and Amy Mills Tunnicliffe   INGREDIENTS:
    1/2 cup paprika
    1/4 cup kosher salt, finely ground
    1/4 cup sugar
    2 tablespoons mustard powder
    1/4 cup chili powder
    1/4 cup ground cumin
    2 tablespoons ground black pepper
    1/4 cup granulated garlic
    2 tablespoons cayenne
    PREPARATION:
    Mix all ingredients and store in a tightly covered container.   **Add a little brown sugar into the mix for variety and a "carmely” coating on the fish.

    Ooooh Shelly, the Magic Dust looks wonderful.  I always love the cooking light recipes too.  I have one from there that uses diced red onions, honey, mustard and I can't remember what else, but it's yummy [:)]

    awww, Shelly!!  YUUMM!  Almost anything with salmon sounds delish to me.  One of the few things I find easy too cook (as a single person, I barely cook.)  I'm saving that rub recipe!

    I hate mayonnaise, but salmon baked with a thin layer of mayonaise with dill & flavored salt (or mixed with soy sauce) is really delicious. The coating really locks in the moisture and flavor without being too overpowering. Pop it in a 350 oven for a little while and you're good to go!

    I love dill... so I will have try try the mayo one then. paige and Cathy... do yourself a favor and try the maple glazed salmon one i posted. The rub is an awsome combo with the pure maple syrup... the only difference is that i glaze it with the syrup throughout the cooking and not just the end... i never liked salmon until that recipe...

    I'm pretty sure it is.  It might be one of the 5 star recipes, but I'm not sure.  If I can find it, I'll post it.

    Honey-Glazed Salmon

    object2=" ?>1 tablespoon chopped fresh or 1 teaspoon dried thyme
    object2=" ?>3 tablespoons honey
    object2=" ?>1 tablespoon Dijon mustard
    object2=" ?>1/2 teaspoon salt
    object2=" ?>1/4 teaspoon ground red pepper
    object2=" ?>4 (6-ounce) salmon fillets (about 1 inch thick)

    Cooking spray
    Thyme sprigs (optional)

    Prepare grill or broiler.
    Combine first 6 ingredients in a small bowl. Brush honey mixture over skinless side of fish. Place fish on a grill rack or broiler pan coated with cooking spray, and cook 6 minutes on each side or until fish flakes easily when tested with a fork. Garnish with thyme sprigs, if desired.

    Yield: 4 servings

    I'll tell you one way to eat salmon that is easy peasy and quick but quite tasty.... steam some salmon and flake it into some hot cooked pasta, mix with pesto to taste.
     
    Also, it's reeeeally nice if you gets some crushed/fionely chopped hazlenuts and coat the fillets in them before pan frying.  YUM.
