Guys... that's cheating!
Here's mine:
These are spiderweb cupcakes, made with pumpkin. They are yummy, similar to carrot cake, not quite so heavy, but still a little moist
Ingredients:
Ingredients
115g soft brown sugar
2 eggs
120mls sunflower oil
115g
butternut squash or pumpkin
Zest of 1 lemon
115g self raising
flour
1tsp baking powder
1tsp cinnamon
1. Preheat oven to
gas 4 (180C, 350F)
2. Beat sugar with eggs and sunflower oil, fold in squash and lemon zest, then mix flour, baking powder &
cinnamon together, sift into the mixture and fold in. Now it looks like this:
3. Spoon into cake cases (makes
12) and bake for about 18mins.....
4. Once cool, warm 150g White choc
till almost melted. Leave to stand for 5mins. (This makes it easier to do the decorating bit, wish I'd found this out sooner!) Anywho, spoon the white choccy over the cakes...
5.
Melt 25g dark choc (as ^^).
6. Fold a square of greaseproof paper into
eighths and tape together to make cone.
7. Spoon dark choc into cone and
snip off the tip. Pipe a dot in the middle of each cake.....
8. Now for the slightly fiddly bit. Pipe 3 concentric circles around the dot.... I hold the cone still and spin the cake, but whatever workls for you
9. Drag a skewer from the centre to the edge 6-8 times to make a funky spiderweb pattern.
Et voila! Enjoy!
