I toss them in a ziploc & refreeze them every time. I would be far more worried about something, bacteria wise, growing on them when they were sitting there thawed, than I would frozen. I would not give my dogs bones that are thawed, but that's just me.
In my experience, most dogs won't go straight for the marrow, so they usually get a good mix of bone & marrow. Bone usually firms everything up. That being said, marrow is like crack to Shooter. He will focus entirely on getting it out without chewing the bone at all. He's the only one that we have that does that though. None of my guys have any issues with eating marrow, so I've never had to worry about that.
