My vet called and he has spoken with the internist at Purdue. She said as long as Jessie doesn't have any symptoms of pancreatitis there's no need to do anymore tests. She considers treatment a success if the dog is feeling well and isn't vomiting, etc. The fact that the results from the SPEC cPL went up from the last test are puzzling to her and she can't explain it; I think it may have been from going through the diet change a week before the test, but that's just me being optimistic. 
The best part of all this is that Jessie loves her cooked diet and is doing fine, blissfully unaware of all the worry she has caused her mom.
