Favorite never fail appetizers ??

    Favorite never fail appetizers ??

    I love to cook and could live on appettizers.  On the road we often have get togethers at our rig. I have a fire pit we set up and every one hangs out swapping tales and brags, crying on each other's shoulders. I feel like I am doinf the same ole same ole...any tips??

    I can grill, cook in my convection oven or on the stove top,  looooooove cream cheese with toppings. I can put up almost anything ie marinated carrots or spicey green beans.

    Fried dill pickles is a winter favorite but I am looking for a few new summery ones.

    Thought I would do bacon wrapped scallops on the grill.  Roasted red peppers over creme cheese,  stuffed olives ( garlic, jalepeno, blue cheese) Top Dog Salsa and chips,  crudites are a favorite...

    What do you toss together for company ??

    prosciutto wrapped melon is nice when melons are in season

    guacamole is normally my turn to appetizer, or sometimes I do avacado corn salsa.

    I like to make mostly stuff I can put together ahead of time for spring / summer get togethers. In the fall and winter I have done tapas dinner parties, but that is a lot of work.

    I made this recipe last weekend, and it turned out really good. My sil doesn't like beef so I made chicken skewers as well for her. Courtesy of Cooks Illustrated:

    Gas-grilled beef satay with spicy peanut dipping sauce

    Meat that is partially frozen is easier to slice into thin strips. Asian chili sauce is available in most supermarkets under the name sriracha. About forty 6-inch wooden skewers or twenty 12-inch wooden or metal skewers are required for this recipe. (We prefer metal skewers; even when soaked, wooden skewers often burn.) If you would like to halve the recipe, buy a 1-pound flank steak and cut the remaining ingredients in half. The peanut sauce may be made a day in advance and refrigerated. Bring the sauce to room temperature before serving.

    12-18 as an appetizer, 4-6 main course

    Peanut Sauce
    1/2 cup smooth peanut butter 
    1/4 cup hot water 
    2 tablespoons lime juice from 1 to 2 limes
    2 tablespoons Asian chili sauce 
    1 tablespoon fish sauce 
    1 tablespoon dark brown sugar 
    1 tablespoon minced fresh cilantro leaves 
    1 medium garlic clove , minced or pressed through garlic press (about 1 teaspoon)
    2 scallions , white and green parts, sliced thin
    Satay
    1 large whole flank steak (about 2 pounds)
    1/4 cup fish sauce 
    1/4 cup vegetable oil 
    2 tablespoons Asian chili sauce , or more to taste
    1/4 cup packed dark brown sugar 
    1/4 cup minced fresh cilantro leaves 
    2 medium garlic cloves , minced or pressed through garlic press (about 2 teaspoons)
    4 scallions , white and green parts, sliced thin


    1. For peanut sauce: Whisk peanut butter and hot water together in medium bowl. Stir in remaining ingredients; transfer to serving bowl and set aside.

    2. For satay: Cut flank steak in half lengthwise and freeze for 30 minutes.

    3. Slice each piece of steak across grain into 1/4-inch-thick strips. Combine fish sauce, oil, chili sauce, brown sugar, cilantro, garlic, and scallions in gallon-size zipper-lock plastic bag or large bowl. Add steak strips and toss to coat evenly. Refrigerate for 1 hour but no longer. Weave meat onto individual skewers—1 strip of meat if you’re using short skewers or 2 strips of meat for longer ones—and lay flat in shallow container.

    4. To Grill: Turn all burners to high, close the lid, and heat the grill until very hot, about 15 minutes. Use grill brush to scrape cooking grate clean. Turn all burners to medium high.

    5. Spread half of skewers out over hot cooking grate and grill, covered, until meat has cooked through and is lightly charred around edges, about 7 minutes, flipping them over halfway through grilling time. Transfer to serving platter and cover with foil to keep warm. Repeat with remaining skewers. Serve immediately with peanut sauce.

    These sound great, guys!! I'm a big fan of stuffed mushroom caps, too. BF's family makes a great dip with grated radish, garlic, and cream cheese, but I'm not sure of the exact recipe. (It's a treasured family tradition to have it for New Year's!)

    Another good one is to make (or buy) a good salsa - one actually made with diced tomatoes, chiles and cilanto as opposed to one of the more liquid ones.  Stir in some drained & rinsed black beans and a can of Mexi-corn and serve with tortilla chips or crackers.

    I love salsas !!  I make them from the basics  and My Guacamole is simple but world class..

    We also make Southern Caviar  

    A can of Black Eyed Peas with juice

    Diced Avocado, Onion, Tomato , and a few slices of Jalapeno

    Chopped Cilantro and 3 Tbsp of Lemon Juice

    Mix and serve with Tortilla Chips

     OK, I don't know if this is the sort of thing you were after, but this is something my MIL did last weekend at the BBQ.  It was basically kebabs using chunks of pork and between those chunks, dates wrapped in bacon.  Yes, I know it sounds weird.  But they were DELICIOUS.

    I LOVE those long green peppers filled with cream cheese, wrapped in bacon and roasted on the BBQ!

    I love brushetta on a baguette

    I love brie and proshiutto ham on sliced baguette

    I love garlic stuffed artichokes roasted on the grill for everyone to pick at

    I love my sweet 7 layer dip, because its warm and the secret is cream cheese instead of sour cream

    Get a 8x8 dish and lay down the cream cheese first, then refried beans and then a whole lot of shredded cheese, pop it in the oven for 15-20 minutes until the top cheese is melted all the way. Then I throw on gaucamole, pico de gayo and chooped olives. Its so fast and is a big hit!

    I just have to share this awesome thing I bought.....its cast iron so its durable and you put tealights in the bottom to warm the iron and the fod dish atop it. I didnt have high hopes for it until I placed my homemade macaroni on it and it started to bubble after 10 minutes, now I'm hooked! Great for BBQ's/camping/entertaining

    Another one that is always a hit is cream cheese and salsa mixed together and served with chips.  This is my favorite quick easy appetizer!

    Our favorite and most requested is Queso.  Melted Velvetta cheese with Rotel; and of course Fritos and Tostitos.  Easiest too.

    But, another favorite around my house is crab appetizers:

    1 stick butter; 1 jar Old English cheese spread, 1.5 tsp Mayonnaise, 1tbsp instant onion, 1/2 tsp garlic salt, 1/2 tsp seasoning salt, 7oz canned crabmeat (or fresh); 6 english muffins split in half.

    Blend all ingredients.  Spread on muffin halves and freeze on cookie sheets.  Store in plastic bags until ready to use.  To serve, cut muffins into bite size portions while frozen.  Place on cookie sheet and brown in a 350 degree oven or toaster oven (approx 10 mins or so).  Serve hot and enjoy!

    Cream cheese or sour ceam? Do you soften the cream cheese first, or use whipped maybe?

    We have used sour cream and salsa and that's awesome & easy, always a hit. But the cream cheese sounds yummy, too!

    I usually try to remember to have  the cream cheese at room temperature or else I microwave it for about 5 or 10 seconds.  You want it just soft enough to be able to scoop some up with the salsa.

    I love brie served with french bread toast, granny smith apples and sliced almonds, but that's a little complicated for rv'ers since you have to cook the brie a little.  I love cream cheese stuff.  try cream cheese mixed with a can of salmon, golden raisins, some nuts (pecans) and dill.  quick and easy enough to make ahead of time.  unfortunately it never lasts very long at my house.
