I am looking for good recipes to use up pumpkins. When I was pregnant, one of my pregnancy books has a recipe for a casserole that had pumpkin and either spinach or chard--I think chard. The nutrition was off the charts and it tasted delicious. I can't find the recipe or remember the book I found it in
Anybody know a nutritional way of cooking a pumpkin (aside from simply baking)? Preferably simple and quick. Thanks!
